Do you ever have potlucks at work? My office only does a dessert potluck for the Big Ole Thanksgiving Feast. My husband’s office team, however, has decided to make potlucks a semi-regular lunch event. Since Eric is Eric, that means I’m providing his share. No complaints though, it’s best for all involved (=my hips) when I share the blog bounty Retail Displays.
The theme of this latest potluck is Spicy, since his group likes to out-spice each other on a regular basis. They love going to Thai restaurants to order foods “Thai spicy” – this sometimes requires a waiver, I kid you not. I prefer not having to read the small print before I eat my lunch, thankyouverymuch. Since Eric knows what’s what, he signed me up to make the dessert. Spicy dessert? Cringe…how about…spiced! Close enough. Perfect for autumn, and a lack of heat means I’ll enjoy eating it too, because you KNOW I’m not making a big batch of deliciousness and then abstaining from the fun green coffee mug.
Have cupcakes lost their cool factor? They had a really long run as everyone’s favorite, but seem to be falling by the wayside, making way for gorgeous four-tier cakes of magnificence. My Pinterest account is supa impressed with everyone’s mad skills. Cupcakes are convenient: I get to keep some of what I make (see greediness above), it’ll be much easier for him to transport to work, and it doesn’t require any messy cake cutting in their break room. Traveling with dessert (especially to a kiddie event)? Cupcakes all the way.
These cupcakes, sans frosting, make amazing muffins. Lightly sweetened, with apple bits strewn throughout…they’re really delightful. However, I’ve titled these cupcakes for a reason: the frosting is boss. It has a bit of an icing consistency: the top hardens slightly, and the melted butter creates a non-fluffy frosting. Instead, this is thick, rich, and a little goes a looong way. An awesome switch-up from the fluffy, whipped frostings we typically make.
